Thomas Franks is delighted to have started its Chef Academy in partnership with Tess training an award winning national training provider. We are starting with a bespoke Commis Chef Apprenticeship Programme (level 2) and it was fantastic to see so many Chefs on board. The first session was held at BSI and was an introduction phase, with managers bringing their future stars to get to know the group and learn about the course ahead.

The bespoke Thomas Franks programme will take place over an 18 month period and will include the following masterclasses;

• Food safety and risk assessments
• Knife skills, fruit and vegetable preparation
• Meat and Poultry
• Fish and shellfish
• Stocks, sauces and soups
• Pasta, rice and eggs
• Biscuits, cakes and bread
• Stock ordering, waste management processes and legislation
• Technology in the catering industry
